Chocolate Weet-Bix slice

Mmmm - afternoon tea visits both days this weekend has meant an excuse for a little bit of baking chez Kuka. I made this slice to take along to Brown Owls a few weeks ago, and had been meaning to post it here, so this was the perfect chance to snap some photos and share =)

I have no idea where this recipe came from - we used to make it often as kids and its hand written into my copy of "Cookery the Australian Way" (in fact, I seem to recall it being hand written into one of my mum's books too.) The recipe is a little bit special in that the main ingredient is Weet-Bix - that makes it healthy enough to have an extra piece, don't you think?

In a mixing bowl combine 4 Weet-Bix (or whatever wheat-based biscuit cereal you fancy), one cup of self raising flour, half a cup of sugar, a tablespoon of cocoa and 185g melted butter.
Press the mixture into a greased slice tin, and bake for about 18 minutes at 180C.

That's it!

Once its cool you can ice it - I used chocolate this time, but chocolate peppermint is also tasty! And sprinkles! =)

  3. In my childhood home this recipe is known as "Michelle slice" after my older sister. She invented a new version, which has the same base as yours, topped with a layer of peppermint (can't recall how that was made), then a layer of melted chocolate. Yummmmmmm

  4. ooh thanks for posting the recipe (nearly wrote pattern then, whoops)! I've had it on my mind since Brown Owls, and I think I've got all the ingredients on hand. Clearly it's fate, and I shall have to make it right now.
